

This is a Japanese restaurant located in Mauritius, featuring a two-level layout designed for both operational efficiency and an engaging guest experience.
The ground floor serves as the main dining and service area, centered around beverage offerings and sushi. A stylish bar counter is installed to serve cocktails and craft beer, creating a vibrant social hub. Adjacent to the bar is a dedicated sushi preparation area, where chefs handcraft fresh sushi rolls and nigiri. The highlight of the space is a central conveyor belt that runs through the dining area. Finished sushi plates are placed on the belt by the chefs, allowing guests to simply pick their desired dishes as they pass by—a fun, interactive, and convenient dining concept.
Also located on the first floor is the dishwashing area, strategically positioned for easy collection and recycling of used tableware, which helps maintain cleanliness and streamline service operations.
The second floor functions as the primary production kitchen, thoughtfully zoned into separate stations to support diverse culinary offerings: a Chinese cuisine section, a Western cooking area, a cold dish prep station, and an additional sushi preparation zone to support the high volume needed for the conveyor system.
Connecting the two levels is a service elevator, which acts as the key link between the kitchen and the dining floor. Prepared dishes are loaded onto serving trays and transported efficiently from the second-floor kitchen down to the first floor via the elevator, ensuring timely and organized delivery to the dining area.
This vertical division of functions optimizes workflow, reduces cross-traffic, and enhances food safety by separating heavy kitchen operations from the guest environment, while the sushi conveyor belt adds a dynamic and memorable element to the customer experience.
