

This is a restaurant located in Guam, designed with a clear and efficient workflow to support high-quality food preparation and kitchen operations.
The storage area is equipped with both freezer and refrigerated units to properly store meat and fresh produce at optimal temperatures, ensuring food safety and freshness. Dry goods are organized on four-tier shelving units, providing accessible and well-structured dry storage.
For ingredient preparation, the kitchen features two stainless steel sinks and durable stainless steel worktables, allowing for thorough washing and sorting of raw materials. Once cleaned, ingredients are transferred to a central island workstation where they are chopped, sliced, and prepped for cooking.
Prepared ingredients then move to the cooking zone, which is fully equipped with a range of commercial appliances: a cooktop (burner), griddle, grill, fryer, and noodle cooker—enabling the preparation of a wide variety of dishes, from stir-fries and grilled items to fried foods and noodles. Notably, two commercial rice cookers are included, specifically dedicated to cooking sushi rice, highlighting the restaurant’s Japanese or Asian-inspired offerings.
The dishwashing area is fitted with a top-loading commercial dishwasher, allowing for fast and efficient cleaning of plates, utensils, and cookware. To bridge the gap between cleanliness and food preparation, a pass-through high cabinet with dual-access doors is positioned between the dishwashing area and the food prep (plating) zone. Clean dishes are loaded from the dishwashing side and retrieved from the prep side, minimizing cross-contamination and streamlining service.
This well-organized layout promotes hygiene, efficiency, and smooth kitchen operations, ensuring consistent food quality and effective teamwork in a professional restaurant environment.
