This is a fast-food restaurant located on the third floor of a shopping mall in the Congo, specializing in fried chicken, burgers, and pizza.

To facilitate the efficient transport of ingredients from the delivery entrance up to the kitchen, a flatbed trolley is provided, allowing staff to easily move raw materials into the kitchen area from the rear of the restaurant.

Upon arrival, ingredients are stored in designated refrigerated and frozen storage units—ensuring meat, vegetables, and other perishables are kept at safe temperatures. Dry goods are stored in dry storage racks nearby.

The preparation area is equipped with two stainless steel sinks for thorough washing of fresh produce and other raw ingredients. Once cleaned, items are transferred to a central stainless steel worktable for cutting, portioning, and further preparation.

For protein preparation, a dedicated marinating process is incorporated: meats are placed in a commercial meat marinater to absorb flavor, then moved to a nearby breading machine for consistent coating. After breading, the items are ready to be fried in the deep fryer, producing popular menu items such as fried chicken, chicken tenders, and French fries.

On the opposite side of the kitchen, a separate pizza production zone is set up to handle dough preparation, topping application, and baking. This area includes a pizza prep refrigerator to keep toppings and dough chilled and fresh during assembly. Finished pizzas are baked in a two-tier conveyor pizza oven, ensuring consistent, high-volume output with even cooking.

This layout ensures a logical workflow from receiving to preparation and cooking, supporting efficient operations in a multi-level mall setting while maintaining food safety and quality across different food categories.
